A shop that sells in a room and on a website has one catalogue, whatever the software says. Most of the work in commerce is making that true.
We build stores on WooCommerce because the business owns the software outright, and because it can be made to do things a hosted platform will not: four-level catalogues, fitment finders that never offer a dead end, collection from a courier's shop, or a product where each unit is unique and can only be sold once.
Where an off-the-shelf point of sale is fighting the store, we replace it with a terminal of our own that writes ordinary orders and moves ordinary stock, so the counter and the website stop disagreeing.
